CHARGRILLED PIECES FAJITA

750 grams HARVEST GOURMET® Chargrilled Pieces

3 ounces red pepper, sliced

3 ounces yellow pepper, sliced

2 ounces large onion, sliced

2.5 tablespoons fajita seasoning mix

2 tablespoons Olive oil

20 ounces small seeded or wholewheat wraps

400 grams cans sweetcorn in water, drained

500 grams bag salad leaves
-
250 grams fresh tomato salsa

65 grams Coriander leaves
-
1 ounce red onion, diced
-
3 ounces small avocado, diced
-
1 ounce lime, squeezed
-
1 ounce Freshly ground black pepper
Preparation

1Preheat the oven to 180°C (160°C for fan ovens). Cover the wraps in a large sheet of foil. Place on a baking tray and warm in the oven for 5-8 minutes.

2Heat the oil in a large non-stick frying pan and cook the peppers and onion until they start to caramelise, set aside on a plate. Add the HARVEST GOURMET Chargrilled Pieces to the pan and cook until turning light golden brown, return the vegetables to the pan, add the seasoning and cook for a further minute.

3Make a quick corn salsa – mix the sweetcorn with the diced onion, avocado and lime juice. Sprinkle with the coriander leaves. Season to taste with black pepper.

4Place everything into bowls or plates on the table and let everyone help themselves!
